Chocbeetroot Brownie Bites

Do you want a nice easy snack and something you can put in your lunch box, well is Chocbeetroot Brownie Bites. Chocbeetroot Brownie Bites are a quick delicious, your kids will eat Chocbeetroot Brownie Bites all the time. All you need is beetroot, egg, medjool and cocoa powder. In the super market it would cost about $5 for 12, but if you make it at home. It will cost you $5 for the ingredients, but you will make much more. Chocbeetroot Brownie Bites are healthy, because they don’t have any sugar or chocolate. They are also good for school because you can quickly eat them in two bites, plus they don’t take up much room in the lunchbox.

Ingredients

Cooking spray 50g

cooked beetroot

3 eggs

8 medjool dates ,pitted and roughly chopped

1/4 cup applesauce

1/2 cup cocoa powder

Equipment

You’ll need a  24 cup mini muffin tin and food processor

DIRECTIONS

1. Preheat oven to 180 degrees Celsius (fan-forced)

2. Lightly spray a 24 cup mini muffin tin with cooking spray

3. In a food processor, blend the cooked beetroot, eggs with the eggs make sure you don’t get any egg shell in the mixre and dates for 1-2 minutes

4. Scrape down the sides of the food processor, then add the applesauce and cocoa powder and blend again until the mixture is smooth

5. Use a small spoon to spoon the mixture into each of the muffin holes, filling each hole almost to the top

6. Bake for 7 minutes, then allow to cool, then you can eat them if you make allot and you want to save them for later store them in the fridge or freezer. Then enjoy
